We settled on a single malt for this Helles-style lager, selecting Feldblume. Feldblume, like all Admiral malts, is grown using no-till practices on California family farms. Feldblume is a light golden malt with floral aromas of clover, hay and a mild scone-like sweetness. We utilized a step mash to create complexity and a traditional European lager yeast, along with Mittelfruh hops, yielding a Helles with traditional flavor, but some extra magic owing to the Feldblume malt.
