cool beer, fashioned as a trappist style single, i think they have done a nice job with it. its a bold attempt for a brand new operation to kick it off with a beer like this, this is not the classic drop a belgian yeast strain into a pale ale wort and ferment it warm and see what happens. this is far more understood and advanced than that. i love the yeast strain, its pleasingly dry, not allowed to go to insane here, and with some cool green pear and white wine notes that i think really work in here. its complex but mild at the same time, not without its hops too, pretty nuanced really, and extraordinarily drinkable as they go. they are wise to put it in a pretty stemmed glass, to keep the abv at a spot where this is a session beer, and it really was my favorite of all the beer i had up here, and they were all pretty good. this would make a cool four pack if they decide to go in that direction, i would buy it. could use more carbonation, but a tough style to jump right into for a new brewery, and really solid, they should be proud of this one!
