unexpected from these guys, super sexy packaging, a funky oak aged saison with high acidity, done with palisade peaches. a little darker than blonde but lighter than brass, fizzy liquid but the head rises and falls quickly, a little dull, some light cloudiness as we pour the bottle down. aroma on this is peach forward and authentic there, dry, white winey, but also super acidic, more bacterial pucker than saison esters to me, sharp wine, apricot too, marmalade, fuzzy ripe peaches, quite a bit of wood, also quite a bit of wheat malt, nice balance but exceedingly sour. the flavor agrees, nice complexity to this, minerals and dry grain at its heart, not overloaded with fruit but the real high quality peaches are evident, im not sure id love this base beer without them, its woody but not with a ton of personality from it, super acidic without much funk or saison yeast left in tact, and it seems like this really depends on the fruit. not as well refined overall as their best beers, but i like the contribution from the grain and i like how forward the peaches are while also being fermented down to dry. could use a touch more carbonation and overall spirit, i also think the acidity is limiting and covers some nuance id like to see more of in here, but its cool these guys have gotten into the bottled saison game, and it was great to check in on them recently after a number of years away. really solid brewery overall! i would venture to guess this isnt going to age super well if its already this sour, that element has already totally outcompeted other fermenters...
