Named after our Co-Owner Larry's father-a native of County Offaly, Ireland & beloved member of our community. This Irish Stout, served on nitrogen, boasts huge roasted barley aromas & flavor with a subtle fruity ester profile from the traditional yeast. Brewed for St. Patrick's Day, in honor of Seamus, may his love for Ireland be shared in every glass!

Poured from 16oz can into a dimpled mug.
Appearance: rich, dark, nearly-black hue with a finger of frothy tan foam atop. Looks good, though head retention could be better.
Smell: caramelly, a bit roasty, a bit chocolatey, and honestly a bit on the sweet side. There's some good stuff here, but it doesn't quite live up to the "dry" style.
Taste: more of a slightly astringent roastiness than in the aroma; there's also a little bit of chocolate and caramel in there. It's a little sweet for the style, and though the dryness of the roast cancels that out some, it's still not quite right.
Mouthfeel: medium-rich body with a moderate carbonation and a good creaminess.
Overall: a totally cromulent beer, and one I'll enjoy finishing, but even the brewer advertises it as a "dry Irish stout", and it doesn't especially meet that qualification.

Poured into a small plastic water cup: color is solid black, head is very light tan and only presents a very thin 1/4 inch, head dissipates to nothing.
Smell is light roast, hint of coffee, very feint chocolate, grassed hops.
Taste is more light roast, light coffee, feint dark chocolate, added light sourness and acidity, limited grassy hops.
Mouthfeel is moderate carbonation, low sweetness, low/moderate bitterness, light acidic sourness.
Overall a solid Irish Dry Stout with the light sourness that assists with cleaning up the bitter roast malt.

On draught, pours dark brown/black, with a slight amber hue. The tan head doesn’t last, but leave a ring that yields some faint random almost sandy looking lacing.
Not very substantial in the body, but the roasted malt is well done, barley, coffee and chocolate nib flavors linger. Part of the aftertaste that is difficult to describe. Perhaps a little chalky, sour water flavor with some bitterness. A little off on the finish.

Almost black body, small head quickly fizzes away, a few specks of lacing. Strong roasty aroma, and just as strongly coffee. On tasting though, these are both pretty mild, and there is a faint chocolate hit. Mouth below medium, finish roasted malt.
