Lightly hazed gold with rapid streams of carbonation. Dense layer of meringue foam that has an airy surface texture. Plenty of drippy lace around the edges.
Aroma is pleasant with a light rustic funk of the Fantome and lambic blend. Light acidity present.
Taste is a nice balance of the tart funk saison and similarly acidic young lambic. The chardonnay barrel lends a lot of tannic oak character that lingers into the dry aftertaste. Light to medium bodied with a spritzy feel. Overall this was fun to try and share with fellow Fantome serious knowers/lambic fans. Thanks to Bill and Adam for this one!
