A: Isolated discharges with basket rests, which are revisited to dispense over time. The presence has a reddish tinge that imitates the northern cardinal, while also resembling the summer tanager aside the scarlet highlights. Coupled with, a park cattle toned collar with an off-white/sheep resemblance. The retention is moderate to the quarter inch, where the cling is unassuming, before oxidation furthers that rescinded effect

S: Opens on the fresh – sweet – varietals with tannin acridity, while the phenolic inclinations construct beneath. The notations lean on raspberries that frame a saccharine tartness, as the vanilla beans drift softly per the age. All the while, a cobwebbed presence that creeps above casks, and old abandoned attics, when permitting the sun to glass. The development speaks to the soft fleshy funk with an uptick on vanilla over the fruited stabilizer, as old stone churches linger above a catacomb mustiness. Sequentially, an old age hop attendance, for a phenolic supplement, towards hay & soft-ripened cheese. The farmland details continually build near dried wafer crusts, as the hours exceed > 2. A final pour at the 3hr mark revives the acidic intake, given a carbonation lift that’s again stretched, for a fettered spontaneity in excess of the additives

T: A corrosive bite on the aged vintage with a rustic dexterity to the microbes, as the bacterial trickiness grows. There are tannin derivatives thru plant polyphenols, by way of raspberry accompaniments, which lend an acrimonious causticity. Underneath, an Araneus cavaticus web on damp settings to barn dust, as grain bins connote wheat environs. The Madagascar and Tahitian trappings are trivial at inception, yet offer a backend link to cherry bouquets with a soft perception on sweet cream caviar. What follows is an old hop play on aged brie, which stays relatively hidden, behind the influential – metabolic – products. Aeriation offers a small-scale growth to phenolic compounds that slightly aid in/contract the acridity, by placing causticity in the afterthought, in favor of the fermentable complexities. Nonetheless, the goat-y elements are less prevalent than the foretelling whiffs lead on, as plump fruit draws a vinegary element to the seeded funk. The later discharges add back to the carbonation, which gets/continues the prolonged exposure, for necessitating those horsey characteristics with the low tones in cowhide & calfskin. Thus, a development that becomes more appreciative to the spontaneous nature, while maintaining the vanillin thru a cognizant basis, as the age aside time jeopardizes the occurrence. The acidic control eases at length, for more webbed fresh fruit, while the mechanics prepone new oaked-barnyard characteristics

M: Cuttingly piercing to the surface that eventually subsides, by moderation, if permitting the time. On top of this, a calcareous granite minerality, which lingers alongside the rustic footwork. The carbonation is drawn off thru an aeriated approach, which bids a soft awareness to the fruited sweetness, amid the warming boosts. Consequently, an outcome that’s naturally lactic. Albeit, one that’s permitting to a smooth (timed) infection

O: The blend platforms raspberries justly, while implying vanilla in an elderly – vintage appropriate – manner. A timespan that has aged with a bacterial sharpness, but a breath of time that’s more favorable to the fermentable workings than the younger self. Considering, the revamped interplay across water, barley malt, wheat + hops

750 mL bottle. Pours red with a medium white head. Smells of raspberry, vanilla, deep vinous acidity, and oak. Tastes quite sour. Sour raspberry and red wine. Vanilla is less prominent. Oaky and dry back end. Intensely sour back end. Kinda tough to drink. I don't get the hype.

Bottle at muted horn.

Pink head. Vibrant ruby raspberry color.

All jammy raspberry and raspberry seeds. Sour and tart. I really can’t pick up the vanilla which is a bit of a disappointment. Maybe it’s softer than other framboises?
