1, 2 and 3 year old lambic with fresh elderflowers (harvest June 2019) from a local nature reserve and 2018 harvest of moscato bianco and muscat ottonel. Blending the two grape lambics we liked how the aromatics and vinous mouthfeel finished dry by rounded tannins. Although already quite a complex blend we were looking for even more complexity yet carrying more intense retronasal fragrances and blossoms by blending in our elderflower lambic. This beer is made to celebrate Mia, the first daughter of our dear friends Evelien and Ruben.

750 mL bottle. Clear golden. Smells of strong grape, green peppery elderflower, dried grass. Tastes of much stronger elderflower here. White wine, light sweetness, citrus, green pepper bitterness. Low sourness. Pretty tasty.

Incredible interplay between the grapes and the elderflower. You could have told me this was wine and I would believe you. Lambic qualities were overshadowed by the fruits and flowers but that's ok here. Delicate flavors. A very elegant beer.
