South of Shaw is a collaboration between our brewers and the winner of our homebrew competition, the Morgan Cup. South of Shaw is a Brut IPA and represents a newer IPA style. Brut IPA’s are characterized by substantial hop aroma and flavor with light malt presence and light body. Because of this, Brut IPA’s are the truest expression of a hop because there are no competing malt flavors. We used Mosaic (Ripe Fruit/hop resin) hops exclusively throughout the boil and subsequent dry-hop. Mosaic is responsible for the Ripe Fruit, Candied Apricot, and Resin notes in the beer.
