this one is all over the map, a oaxacan inspired gose, spontaneously fermented, with peppers, saffron, and coriander, not way different, but different enough, and pretty sour too! its a little heavy to me on the grain side, a little less carbonated than it needs to be, and a little too sour, but its a cool beer nevertheless, very terroir. the peppers arent hot, the coriander isnt overly herbal, and the salt is subtle, i feel like the added ingredients work really well here in nose and taste, but its the hefty wheat and the residual sugar that do not belong. its cool there is some funk here, but the fermentation seems incomplete overall, i wish it were drier. i like what the peppers add, a citrus note for sure and a little curiosity, while the saffron is floral and sweet and loves all this grain, its soupy in a good way, like a broth or something. the acidity is high, higher than it needs to be, a distraction even, but overall this is really cool, different, and locally inspired. i liked all the beer here, creative and well done, especially the wild ones. this was fun, but next time around scale back the sour and its a better beer...
