Our IPA is a straight up modern, yet judiciously designed, American IPA. We don't use fruits or lactose, or even children's breakfast cereal, as we enjoy beer flavored beer. We start with a farmhouse-inspired grain bill of floor-malted Bohemian pilsner mat, a bit of raw Sonoran white wheat, Munich I, and flaked oats, then hop it generously with a blend of Amarillo, Citra, and Mosaic hops in the first wort hop, the whirlpool, and dry-hop stages. We use our house English saccharomyces strain to ferment it, and we serve it fresh. Cheers!

English yeast was the wrong choice here. Has a stuffy musty dryness to its texture that puts one off. Hop profile comes off soapy and indistinct. A muddled mess of an attempt at an IPA. Almost more like a farmhouse wheat ale than an IPA. I wouldn't be surprised if some wild yeast had gotten in and caused minor infection...there's something very doughy and rough around the edges here that points to yeast-derived issues.

In short, it misses the mark for the style and just plain isn't very good.

Cloudy, pale gold colored body. Overflowed with foam upon opening and with the first pour. Multi fingers of white head.
Aroma is sugary orange. There is definitely a yeast component (farmhouse ale-like).
Taste is like a heavily hopped saison. Very sweet fruit flavors. Rustic yeast, and dry. Aftertaste is short lived.
Medium mouthfeel. Fizzy and then dry. Over carbonated, with the farmhouse yeast as the instigator.
Hopped to be an IPA but with a farmhouse ale yeast. Both balance each other and work well together as the beer warms, and the edges get softer.

Poured from an undated cam from India House Santa Fe.

On the pour a large head formed necessitating a slow pour over many minutes that formed nice, but foamy domage. Body is a light yellow but very hazy. Light but sporadic lacing forms.

Aroma brings a very bright, almost tart fruity aroma. I have no background on this beer, but maybe they used farmhouse yeast? The hops carry a slightly piney, but very fruity aroma. Malts don't play a big part in the aroma.

Flavor brings in some more NEIPA flavors, but there is still a definite brightness from yeast as well as piney bitterness bringing it back into the middle. Not a traditional juicy IPA, so I agree with the "American IPA" classification.

Feel is full bit the finish is medium short making it easy to drink. The dryness is quite low like an NEIPA, but it becomes crisp at the end.

Overall, this is a very I threshing beer with some farmhouse characteristics and a definite "middle coast" IPA vibe. Some light wild characteristics, but again I know nothing about this brewery as of my drinking this beer. Very interesting unique middle coast IPA. Definitely on the hazy side.
