Germophile celebrates our love for souring bacteria, specifically Lactobacillus in this case. It is our core Berliner Weissbier, and is brewed with a 50/50 blend of Weyermann Extra Pale Pilsner malt and malted white wheat, and is soured with Lactobacillus. We then finish the beer with Thiriez yeast, resulting in a dry and tart refreshing beer. In this variant, we dose our normal Germophile base with a charge of pineapple, and can/keg condition the resulting beer. Cheers, haole!

neat variant of the very tangy but exciting and enlivening original, was glad to get to have a pour off a can on this. hoped this might have a little more head with the can conditioning, but at least the bubbles are there in texture, sort of feels like a sour soda on the palate. the pineapple is obvious but not dominant, definitely in support of the berliner and its bacterial and saison yeast identity, i get some light sweetness from it which cuts some of the bracing pucker i recall in the original, and some summery tropical almost cocktail vibes too, i think it melds with the almost banana esters of the saison yeast and the lemony tartness to yield something quite refreshing and fun, delicate even for how acidic it is. the grain is super light in flavor, like hardly there at all, i almost get as much from the water profile as i do from the malt itself, some spiciness out of nowhere right before the swallow, and then pineapple candy on the finish, not unnatural, but lingering like a hard candy would. tangy, cant drink a ton of this, but a neat variant where the pineapple enhances whats already there in the beer, the way an additive should. artful and clever and pretty well executed, i love these guys! this is unlike most berliners.

Murky yellow pour with a white head that slowly fades away. Great berliner wheat and yeast with light lacto accenting big pineapple and moderate lemon. Taste leads with tart pineapple and lemon juice, berliner yeast, salt, and wheat ending with a hint of funk. More juicy than expected, tart too, lacto felt more than tasted. Great wild berliner for the heat of summer
