Rêverie de Pêche is our tribute to Tyler's grandmother, Reve, who enjoys a lovely cocktail called Peach Fizzy every summer when the peaches become available. The cocktail is based on a combination of ripe peaches and lemonade then blended with a copious amount of rum and ice. In order to emulate this fun beverage, we took a golden sour base that we mashed with lemons, and then was was aged in rum barrels for 15 months. We then refermented our preferred blend on 534 pounds of organic Palisades, Colorado-grown peaches. The resulting beer was then bottled with local wildflower honey as we like to do with our barrel aged beers. We raise a glass to Reve, and her lovely cocktail. Cheers!

Gotta dig all the stuff leftpaw brings out from New Mexico that I would otherwise never see nor taste. This is one of those.

Pours an amber and honey like color with pretty good clarity for something with fruit added. Its a white head 2/5" at first but it quickly recedes and lacks retention. The aroma is lemon first and then some peach. Not noticing anything really specific to the rum barrel.

The taste flips the script. Now there is a substantial "rum-mieness" that might even be the primary flavor component. Lemon and grapefruit like notes are punching plenty heavy alongside it. The sourness is strong, the acidity is moderate. The booziness seems to be a barrel impact moreso than abv. You just taste rum and your senses associate it with booziness I guess. Or maybe the binding grapefruit/lemon like bitterness enhanced it. Carbonation just fine.
