looks like a little something different each time with this one, our bottle was with pinot noir skins, another wild one from these guys, not quite as compelling overall as the vine of the dead we had alongside this, but really solid nevertheless, my first two from this operation, super intrigued and excited about them now! this is a blend of saisons in appears, bottle conditioned with honey. it has a pretty pale pinkish red color to it, a short fizzy head, and some cloudiness through most of it. the nose is sharper than the other one, more acidic and tannic both, a little less wood apparent, but the fruit is awesome, pretty identifiable as pinot noir to me, thin skinned and loaded with terroir, some sweetness is present, a cranberry note, light sulfur, light red wine juiciness, stone minerality, light brine, some cool funkiness too. the flavor is all of this, but is very fruit forward, along with some of the spelt from one of the saisons being evident, nutty and faintly sweet, in support of the grapes. juicy still, also tart, more sour as it warms a little, some alcohol too there, lemon as well, but super earthy and organic the whole way, more funky as it warms too, but the acid is more pronounced for sure. excellent carbonation, cool fermentation profile, and a nice use of these grape solids. id probably have been even more impressed if the other one wasnt so epic, but this is really good too. id like to try some of the other grape variants and blends they do with this one. 2020 fall fruit harvest, bottled in march of 2021. i need more from cellador!

L: The color is reminiscent of a wine that's aged only a few years.
S: A strong punch of tannin.
T: A fizzy start into a grape tannin body into a smooth honey finish.
F: A zinfandel with a honey finish.
O: A odd strong red wine beer.
