this may have been somewhat lower alcohol when i enjoyed a pint can, but i somehow deleted the picture i took of it in real time, dont think i remember it being as strong as what is listed here, i have seen cans with different strengths for sure. lovely beer, as they always seem to be from this operation, i need to get my hands on more of their work, this is again excellent, creative, the right mix of tart and funky, and very ingredient forward with the high apple inclusion and the honey as well, way cool beer. the can conditioning is excellent on this, its light and lively, dry for being so fruit forward, and honestly actually more beer and less cider character than i think i expected, which im fine with, still apple forward, but its apple beer not hard cider, and wild at that, very yeast forward with saison spiciness and rustic character, young bretty funk, some oak there too and vanilla, light tartness and tannic character, apple skin, wood, and a bacterial element all coming together well, its mouthwatering, funky, not too sour, and with a cool apple element the whole way yet more summer than fall, and with floral and subtle sweet layers from the honey, their house culture obviously rules, this is still saison-esque, and really interesting, the honey adds a lot, the wood is mellow but important here, seems to even add some structure, wheat based i am sure, but light there, neatly tangy and always changing, warming up to almost white wine character, good carbonation, refreshing but also slightly challenging in its complexity. pretty darn special, thankful for the opportunity to drink this, love the honest apple influence here, i am pretty high on cellador right now, everything so creative and well executed. would love to try some of the other versions of this it looks like they do...
