A Smoke Beer with Mixed Culture, Lichen, and Mushroom

Brewed at our small rural brew house in a wood fired copper kettle. The wort was moved to our aging cave and fermented with mixed culture in stainless, then aged in puncheon and bottle conditioned. Mushrooms provided by Wild Branch Valley Farm in Craftsbury.

Appearance: Arrives a clear copper color with a one finger head; good retention and lacing action
Smell: Earthy funk and black cherry sourness with wood, tobacco and a hint of smoke
Taste; Black cherry sourness opens with earthy funk developing (the mushroom must be bringing this earthy tone); a touch of smoke in the finish
Mouthfeel: Medium bodied with moderate carbonation
Overall: This is a really interesting beer and the mushrooms deserve the credit

My first dud from Wunderkammer, but I guess it was bound to happen at some point when you're as experimental as Vasilios is... Pours an amber body with a fizzy two finger head and some obvious overfermentation in the bottle (i.e. it geysered when opened). Aromas are smoky, meaty, musty, and tart. Flavors are just too all over the place: quite tart, roasty, and with this strange aspirin-like bitterness that may come from the lichen or turkey tail mushroom. Kinda watery mouthfeel. Overall just not a fan

This one pours a dark-ish murky red color, with a big fluffy head, and a good bit of lacing.
This smells like kind of like an oud bruin, with tobacco, black cherry, woodiness and oakiness, earthy funk, and grassiness.
This has the impression of a really earthy and funky oud bruin. I don’t know if the base itself was an actual brown ale, or just the mushrooms and the forest floor treats sort of gave it a funky and slightly sweet taste, like an oud bruin. There’s not a ton of acidity here, definitely some soft tartness. I don’t get overt mushroom character, but the earthy and spicy sweetness is definitely from the mushroom and lichen. There’s a spicy and herbal funk that is just really great here.
This is medium bodied, with a very mild tartness, and a high level of drinkability. It’s much more drinkable than such an odd beer should be.
Mushrooms really go well with wild ales. The idea should be followed more often.
