a neat take on a wit, brewed with honey and basil of all things, but these elements are subtle, and this ends up being less distinct than i hoped it would be. honestly, with these ingredients, i wanted this to be downright weird, basil and honey, both are subtle to the max, and an above average wit type is what we end up with, and the void of my expectations. the basil is there when i look for it, oily and in the background, and neat with the wit yeast, which seems to have been fermented warm to bring out notes of plantain, coriander, and jasmine, the basil makes it more herbal than fruity which is kind of neat for one of these, but more of it would make it better. the honey gives a floral presence, but its light and kind of taken up by the yeast, light lavender or something through it. good carbonation, very light wheat flavor, dry enough in the end to feel summery. i wanted this to be more dramatic, but i did like the beer. i think these guys are evolving and maturing pretty quickly, and each time i have one of their beers its better than the last. love the idea for this one!
