I've been carefully storing this one for sometime....it's time.....lets see what we got!

A- Pours a strong orange hued color, with hints of gold/amber, bronze, sunshine yellow and comes with plenty of coagulated suspended yeast. There is a nice white head that is quite dense and fizzy, however does not last long, before settling down to a mobile swirl of a layer around the top of the liquid. There are many lumbering columns of bubble rising to the top and modest lacing clinging to the inside of my glass. Overall not a bad looking Tripel!

S- Not as much as I would have guess, however, what there is very nice.....floral yeast, plenty of caramel and/or toffee inspired sweet barley malt, heavy yet smooth alcohol warmth and to finish, there is some Belgian aromatic spice, dry biscuit and grassy hop bitterness. What gets me the most here is how sweet and smooth this has become over the years on the nasal cavity.

T- Oh the flavors follow suit to the aromas rather well, with a heavy dose of soft spice, alcohol, sweet deep malt sugar sweetness, and added tastes of tropical fruit, with banana being primary here. Ending notes of more yeasty, biscuit like crisps (dry), and a slighty bitter hop final finish....well balanced flavor wise

M/O- Smooth strong alcohol paired with a medium/heavy body and reasonably soft carbonation make this a flavorful, balanced and succulent brew that I believe aged well since its creation. It has a lot of sweetness still and actually has likely become more pronounced as time progresses on.....would make a nice pairing to a rich stew but does well on its own too....maybe with some strong cheddar and crackers. I'm glad I still had one of these after 5 years.....the yeast broke down a bit but the character is all there and is very mellow. Good job!

I was excited to try this one and actually had a friend from Medicine Hat bring it up for me to Edmonton as I had not seen it in stores yet. Its a tasty beer. Pours clear gold. Great floral Belgian spice aroma. Low carbonation. Would have liked to see some more action here. I'd say this one could benefit from some time sitting in the cellar, as the can suggests I will let this one sit a while and see how it improves. Im very happy to have tried this 500th brew early and look forward to tasting the changes that my cool dark basement can give. Thanks Mitch!

A nod to their 3rd Anniversary and the 500th brew done at their current location.
10 ounces served in a snifter.
Bright amber colour with lots of white lace..
Slightly spicy aroma with hints of alcohol .
Initially I found the taste to be rather harsh with a nasty alcohol bite that lingered at the back of my throat. However as the beer warmed up some of the classic Belgian notes arrived. Still getting an annoying dandelion leaf bitterness at the finish.

A good effort.
Not sure if I would go out of my way to have another though.
