Aeolian is a blended beer composed of 50% two year old spontaneous beer and 50% 18 month old mixed culture fermented beer.
It was aged on Cabernet and Syrah grapes in Romanian oak. The result is something special. A deep burgundy colored beer with lots of fruit qualities. Dark cherry, ripened berry, some musty funk, oak, with a sturdy acidity throughout.

L: Pours a ruby brown with great clarity; no haze on this at all. A fairly aggressive pour results in a minimal half finger head that dissipates almost immediately.
S: Grapes, black cherry, black currant, lactic acid, and very light notes of oak
T: On the front end I get some light funk and notes of oak. Mid palate the dark fruits come in. I get grapes, black cherry, and black currant. The grapes and black currant carry over to the backend which has a distinct wine-like minerality mixed with just a hint of funk. The finish is not really sour at all despite what the nose would lead one to believe, but instead presents the faintest of tobacco notes.
F: A medium-light body with a light carbonation. The mouthfeel is vinous and with a delicate dryness on the finish.
O: This is an amazing beer that more people should try. I hope that they keep releasing this every year. I have 5 of these left in the cellar and am curious as to how they will develop.
Update from notes on 08/24/25:
At just past five years this one has the faded complexity of the younger iterations imbibed over the years, BUT it STILL retains a surprising amount of carbonation and STILL expresses a complex interplay of black cherries, earthy tobacco qualities, and funky-oak barrel character. I wish I had five more bottles....I wish I had a time machine so I could have more fresh versions..... I wish.
