More than 18 months in the making, Vitalis is a blend of mixed fermentation white wine barrel aged beers that then rested on Marsanne and Roussane Grapes. The result is a wonderfully complex and layered beer offering juicy pear, fresh cut cantaloupe, and melon, with balanced vibrant interwoven acidity. It’s oakiness helps balance its tart, funk, and fruit qualities.

Opened last bottle: 4/21/25
L: Pours a pale gold color with good clarity. The pour produces a finger of off white head that quickly dies falling to a sleight ring around the glass. A plethora of carb streamers rise from the bottom of the glass to let me know it’s still carbonated.
S: white grapes, orchard character, oak notes, a hint of funk, and lactic acid.
T: white grapes, orchard character in form of green apple skins, light oaky funk, tart lactic character on the backend, and a light tannic impression grips the palate on the finish.
F: Light body with medium light carbonation.
O: Aged very well with no oxidation present. This is a world class mixed fermentation ale. The beer was less expressive and tannic at colder temps, but as the beer warmed and opened up its complexity revealed itself. I hope that CW continues its spontaneous ale experimentation.
