When we were getting ready to open, 8 years ago, the very first first equipment we purchased included several large oak tanks known as Foudres. Every year fresh beer gets blended into these tanks, commingling with the aged beer already inside. This is known as the solera process. Although this beer is typically used as a base for our fruited sours, we wanted to bring this beer to you straight out of the Foudre to celebrate 8 years. Pours a clear amber with minimal foam in the Westmalle chalice. Aroma is very sharp with a vinegar nose. Sharp and spritzy on the tongue with a sour sensation. Overall this is a better than average sour brew, with some malty taste still in evidence. If this is what they use for their fruited sours, it would be worth trying a couple. While this is certainly raw, it would be much improved with some new beer without the germs and the lactic acid. From the 16 oz can purchased at Special Brews. Dated 4/1/2024.

Straw colored body, which is a little cloudy. One thin finger of off white head, and this becomes an active set of bubble fed islands and thin ring. No lacing.
Aroma is full of funk - leather and horse blanket, along with concentrated citrus fruit. The oak vessel is behind it all.
Taste is sour, with flavors of citrus and flowers. Some funk, which expresses as dry leather and grass/hay. Has a touch of sweetness from the fruit and flowers. Has a presence of oak. Aftertaste rapidly diminishes and leaves behind a remnant of grass/hay.
Medium mouthfeel. Drying finish which is crisp. Good carbonation.
Well done blend of oak aged and wild fermented ales done in foeders.
