Appearance: 750mL bottle poured into Duvel tulip. Colour is a dark yellow-amber with a massive cotton-white head. Opaque with much visible carbonation. Very lively.
Smell: Spicy yeast with a musty quality. Sweet, bitter hops. Light aromas.
Taste: Very yeasty with a powerful alcoholic sweetness mixed with bitterness from the hops and a sort of citric quality. Medicinal.
Mouthfeel: Light body is silky smooth with a heavily carbonated bite. Finishes sticky but light.
Overall: Very different than the popular Belgian tripels (Chimay, Duvel, Delierium). Definitely interesting and tasty. The overall sweetness makes me think this would pair well with a savor dinner.
