Notes / Commercial Description:
Bio-mimicry is a rustic and wild IPA dry hopped with Amarillo & Belma. The grain bill is 50% MI grown Pilsner malt, and 50% MI grown Triticale. Triticale is a hybrid of rye and wheat, and is a relatively new crop in Michigan. We are one of the first breweries in the state to use this grain! The beer is dry with a nice body and spice from the triticale. The dry body balances with the citrus and strawberry from the hops. This was fermented with our house mixed culture, so it also exhibits many of the yeast characteristics of Genetic Drift.

750 ml bottle into tulip glass; batch #1, bottled on 5/31/2017. Pours slightly hazy medium golden/yellow color with a 2 finger fairly dense and fluffy white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big lightly tart lemon, lime, orange, grapefruit, peach, pear, pineapple, melon, strawberry, red apple, pepper, hay, straw, herbal, floral, grass, wheat, rye, white bread dough, light leathery/musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, citrus/fruity hops, and bready malt notes; with great strength. Taste of big lightly tart lemon, lime, orange, grapefruit, peach, pear, pineapple, melon, strawberry, red apple, pepper, hay, straw, herbal, floral, grass, wheat, rye, white bread dough, light leathery/musty funk, and yeast earthiness. Light-moderate yeast spiciness; and mild tartness and floral/grassy bitterness on the finish. Lingering notes of lemon, lime, orange, grapefruit, peach, pear, pineapple, melon, strawberry, red apple, pepper, hay, straw, herbal, floral, grass, wheat, rye, white bread dough, light leathery/musty funk, and yeast earthiness on the finish for a good bit. Great complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/fruity hops, and bready malt flavors; with a great malt/spiciness balance, and zero astringent flavors after the finish. Moderate dryness from yeast spiciness and carbonation, increasing through the glass. Medium-high carbonation and medium body; with a very smooth, moderately crisp, bready/grainy, and lightly sticky balanced mouthfeel that is great. Zero warming alcohol as expected of 6.5%. Overall this is an excellent wild IPA. All around great complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/fruity hops, and bready malt flavors; very smooth, crisp, clean, and refreshing to drink. Well rounded fruity Brett complexity with perfectly balanced hop and malt flavors. A very enjoyable offering, and spot on style example.
