Trace Elements is a Wild Grisette/Pilsner Hybrid. Fermented in stainless first with German Lager yeast, then finished with our house wild cultures and lightly dry hopped with aged Saaz and Ultra hops. This is intended to be a very light and easy drinking saison, with a touch of bitterness, a touch of acidity, and a touch of funk.

2021 release, 16 oz can, description says "Grisette brewed with Coriander and Orange Zest • 4.5% • Sour level 0/10 • Mixed Fermented and Can Conditioned"

Pours a thin pale yellow with some haze, head dissipates immediately. Interesting earthy, stinky coriander and orange zest aroma, immediately recognize both adjuncts with an underlying wheat pastry. First sip is a stunner. It’s this amazing blend of coriander and orange with a soft pulpy lemonade underneath, kiss of funk. Not sour, ever so barely tart, the finest of bubbles on the mouthfeel gives it a zip, bitterness emerging on the finish. So much flavor with low body and low abv, it’s the perfect mid-day beer- summer lemonade, avoiding the heaping scoops of sugar, but with the flavor you crave and then some.

750 ml bottle into tulip glass, bottled on 9/12/2017. Pours slightly hazy medium golden/yellow color with a 1-2 finger dense and rocky white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of lightly tart lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape, white wine, peppercorn, clove, hay, straw, herbal, floral, grass, cracker, and white bread; with light notes of leathery/musty funk, white wine vinegar, and yeast earthiness. Nice and pleasant aromas with good balance and complexity of fruity/funky/spicy/light acidic yeast, earthy hops, and light-moderate pale malt notes; with solid strength. Taste of big lightly tart lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape, white wine, peppercorn, clove, hay, straw, herbal, floral, grass, cracker, and white bread; with light notes of leathery/musty funk. white wine vinegar, and yeast earthiness. Moderate peppery yeast spiciness, herbal/grassy bitterness, and light-moderate lactic tang/tartness on the finish. Lingering notes of tart lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape, white wine, peppercorn, clove, hay, straw, herbal, floral, grass, cracker, white bread, light funk/vinegar, and yeast earthiness on the finish for a while. Awesome complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, earthy hops, and light-moderate pale malt flavors; with an awesome malt/tart/bitter/spiciness balance; with zero puckering/astringent flavors after the finish. Moderate increasing dryness from tart/bitter/spiciness and carbonation. Medium-high carbonation and light-medium body; with a very smooth, moderately crisp, and grainy/sticky/acidic balanced mouthfeel that is fantastic. Zero warming alcohol as expected of 4.5%. Overall this is an excellent wild grisette. All around great complexity, robustness, and balance of fruity/funky/spicy/light acidic yeast, earthy hops, and light-moderate pale malt flavors; very smooth, crisp, and refreshing to drink; with the modestly bitter/spicy/lactic/drying finish. They fermented a Pilsner and then bugged it up in stainless. Pretty unique, but still tastes like a wild saison all the way through. Awesome well rounded Brett complexities with mild Lacto; nice earthy hop balance and solid pils malt backbone. A really enjoyable offering.
