Another Speciation bottle sent along by @FlintB during his bottomless generosity of NBS BIF#007.

Pour is a crisp clean golden yellow like Martinelli's apple cider. Tight fizzy white head flares up then settles in for a light ring with a scattered archipelago of suggestion.

Nose is full and clean with tart green apple and lemon with some dull earthy funk in there as well.

An immediately puckering lead in of granny smith apple rinds never really builds to the meaty culmination I anticipate to follow, instead hitting a quick middle of lemon and funk before just kind of... pffft, like the back side of the hill washed away in a landslide and there's just a hole there. The sloping finish is faint lemon juice and green apple meat and just a pleasant wash of light tartness. Finish builds back up a little bit with that green apple tart before effervescing away.

Very bright spritzy carbonation crowds in on a surprisingly dry body.

I dig this one quite a bit. Could definitely see it being perfect for a hot afternoon, but enjoying it pretty damn well on this overcast morning just the same. Thanks Brian!!

A - Pours a lightly hazed gold with a large fizzy white head. The head recedes quickly leaving some light soapy lacing.

S - Aroma is barnayrd funk, leather, white pepper and light lemon.

T - The taste is lemon, lime, white grapes, hay, white pepper and some light barnyard mustiness.

M - Medium to light body with medium carbonation. Soft mouthfeel with a nice dry finish.

O - Excellent golden sour. The flavors are bright and refreshing with a nice amount of barnyard funk.

750 ml bottle into tulip glass, bottled on 9/5/2017. Pours slightly hazy pale golden yellow color with a 2 finger fairly dense and fluffy white head with good retention, that reduces to a thin spotty lace cap that lingers. Light spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart lemon, lime, orange, grapefruit, peach, pear, apricot, melon, red/green apple, white wine, hay, straw, herbal, grass, wood, pepper, wheat, cracker, light leathery/musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy/acidic yeast, citrus/earthy hops, and moderate pale malt notes; with great strength. Taste of big tart lemon, lime, orange, grapefruit, peach, pear, apricot, melon, red/green apple, white wine, hay, straw, herbal, grass, wood, pepper, wheat, cracker, light leathery/musty funk, and yeast earthiness. Moderate lactic tang/tartness and peppery yeast spiciness on the finish. Lingering notes of tart lemon, lime, orange, grapefruit, peach, pear, apricot, melon, red/green apple, white wine, hay, straw, herbal, grass, wood, pepper, wheat, cracker, light leathery/musty funk, and yeast earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, citrus/earthy hops, and moderate pale malt flavors; with an awesome malt/tart/spiciness balance; and zero puckering/astringent flavors after the finish. Moderately crisp/clean finishing. Moderate increasing dryness from tart/spiciness and carbonation. Medium-high carbonation and light-medium body; with a very smooth and moderately grainy/acidic/sticky/tangy balanced mouthfeel that is fantastic. Zero warming alcohol for 6%. Overall this is an outstanding sour/wild ale! All around awesome complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, citrus/earthy hops, and moderate pale malt flavors; very smooth, crisp, clean, and refreshing to drink; with the modestly lactic/tangy finish. Apparently they tried implementing some Lambic elements into their fermentation process with this. Fantastic well rounded Brett complexity and nice dry hop presence; not overly lactic with nice malt backing against acidity. A highly enjoyable offering, and amazing style example.
