Different from Bio-mimicry

Open fermented wild IPA. Primary fermentation was done with Omega's Brett Blend #1: Where Da Funk?, which is known for its intense tropical fruit flavors. Throughout fermentation we dry-hopped constantly with Azacca and Citra to do some bio-transformation, which will lead to a beautifully hazy and soft beer when consumed fresh. We also included a bunch of oats and wheat in the grist for a nice smooth and fluffy body. Near the end of primary fermentation we pitched our house cultures, and dry-hopped 2 more times. The end product has been triple dry-hopped, for a total of 5 lbs/bbl of hops, turning this beer into a juicy hop-bomb, with a fruity bouquet of pineapple, mango, pear, and pine.

Really like the way this one looks as it pours. Very inviting appearance, with nice head appealing color. Smells almost exactly like you would expect. Little bit IPA, little bit sour. I really enjoy the taste. Different, but in a good way, with fruit tastes I can’t identify lurking in the background. Glad I was able to try this

This is quite a beer. At first the brett, grain, wheat ipa character is what i focus on. its got zip, good lively feel. But the more sips I take the more the bitter tart grapefruit, lemon, citrus flavors show up with a deceptively creamy, juicy body. smells rustic, super funky overripe stone fruit. looks like an awesome light orange hazy ipa with a ton of head. so dry, yet so juicy- for me, a very unique beer.

An easy-drinking, more intricate take on an IPA, love the funky complexity to this. Floral/herbal notes you don’t expect to see in most IPAs. Crusher.

This beer has an unusual combination a wild ale, an IPA and dry hopped on top of it all. I served the beer in a tulip glass at 44 degrees. The pour on the beer produced a two finger massive head. The head is airy, creamy, and foamy with good retention. The color of the head is bright white with an extraordinary amount of lacing on the glass. The color of the beer is SRM 4 a pale gold with straw yellow hues. The beer's haziness prevents clarity. I do see yeast partials with a fair amount of carbonation.

The initial aroma I sense is mangos pineapple and barnyard. Next, I get a dank basement, cardboard, resin, biscuit, pine, grapefruit, earthiness, oranges, lemons, cereal, grassy, and floral.

I taste biscuit, lemons, grapefruit, herbal, grassy, cereal, floral, pine, yeasty, phenolic, dank wet basement, barnyard, lemons, and yeast.

The mouthfeel of the beer is astringent and crisp.

The body of the beer is medium light, medium carbonation, and full finish.

This beer is funky juicy hop bomb. I am not a fan of this beer. The wild ale overpowers the hops. It is good but could be much better.

Pours a light straw yellow color with a champaign-like head on the pour, which created a huge, soapy white head but minimal lacing.

The smell explodes with citrus on the front and a great barnyard funk that comes through strongly.

The taste puts the funk at the front with a strong hit of sour followed by the citrus coming through on the end.

The mouthfeel is smooth and medium/thick with strong carbonation.

Overall this is an excellent beer with great, complex flavors.

A - Pours a hazy pale gold with a large foamy white head. The head dissapates quickly leaving a good amount of soapy lacing.

S - Aroma is lemon, grapefruit and funky Brett.

T - The taste is pineapple, tangerine, grapefruit, piney hops and a good touch of brett funkiness.

M - Meidum body with medium carbonation. Creamy mouthfeel with a crisp finish.

O - This is killer. A beautiful mix of wild ale and juicy ipa. Great beer.

This one pours a super milky and hazy looking light orange color, with a large fluffy head, and lots of lacing.

This smells mildly and delicately funky, almost like lemon-flavored smarties and fruity yogurt. There's a massive juicy hop character on the nose, too- with some peach, pineapple, and grapefruit.

This is fairly fresh, so the balance definitely swings more towards the dry hop flavors rather than the Brett flavors. It's super hoppy, with a ton of stone fruit and pineapple, a bit of sweet creamy grapefruit, and light grassy/clovey bitterness. There's a hint of fruity and "sweaty" Brett flavors, a bit like sour candy or Smarties. I bet with time this beer will get really interesting.

This is medium bodied, super creamy and surprisingly thick, with a good level of carbonation.

First beer from Speciation- I like their style, and I need to try more.

Pale golden yellow body on this one that you cannot see through. Fuzzy white head that swells to about a finger and a half before settling down, sticking to the glass as it recedes.

Nose is sweet citrus and wild funk. Bright lemon acid and really just funky. Like... if it were possible to manifest a smell that is not unpleasant but that still reminds you of compost... that's almost kind of what I'm getting here. And that's probably the most bizarre/least appealing description I've ever come up with for a beer, but I don't mean it in a negative sense.

Much more restrained on the tongue than I'd expected. Leads in crisp with a light lemon tart acid that gently layers on bruised pineapple and a back of the mouth citrus that's not really just one thing. Tart lemon then returns to the forefront with an earthening coating of pine. Finish is a balance between tart and bitter.
As it warms, unsurprisingly, many of these notes kind of sharpen up. The lemon becomes a little more tart, but the light hints of tropical fruits also become much sweeter and juicier, even if they're still largely playing hide and seek amongst the wild components.

Very clean drinking, it still manages to be quite soft. The carbonation is less than I expected and plays off the tart notes really well. Refreshing and really easy to drink I think this would be even better with the sunny weather we had last week.

A- A hazy golden straw color with a three finger white head.

S- Hoppy citrus, pineapple, tart lemons, oranges, pears, some brett, peppercorns and a mild earthiness.

T- Citrus, some tart lemons, pineapples, pears, nice brett funkiness, some peppercorns, piney.

M- Smooth, light to medium body.

O- A very nice marriage between a funky wild ale and an IPA. Very enjoyable and easy to drink.

750 ml bottle into tulip glass; no bottle dating, but is a recent release. Pours moderately hazy golden amber/light orange color with a 1-2 finger fairly dense and rocky white head with fantastic retention, that reduces to a nice cap that lasts. Thick foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big lightly tart lemon, lime, orange, grapefruit, peach, pear, apricot, pineapple, passion fruit, papaya, mango, melon, guava, berry, citrus peel/zest, hay, straw, herbal, floral, grass, wheat, cracker, and white bread; with lighter notes of pepper, pine, leathery/musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky yeast, citrus/tropical hops, and moderate bready malt notes; with great strength. Taste of big lightly tart lemon, lime, orange, grapefruit, peach, pear, apricot, pineapple, passion fruit, papaya, mango, melon, guava, berry, citrus peel/zest, hay, straw, herbal, floral, grass, wheat, cracker, and white bread; with lighter notes of pepper, pine, leathery/musty funk, and yeast earthiness. Mild herbal/grassy bitterness and yeast tart/spiciness on the finish. Lingering notes of tart lemon, lime, orange, grapefruit, peach, pear, apricot, pineapple, passion fruit, papaya, mango, melon, guava, berry, citrus peel/zest, hay, straw, herbal, floral, grass, wheat, cracker, white bread, pepper, pine, light leathery funk, and yeast earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/funky yeast, citrus/tropical hops, and moderate bready malt flavors; with an awesome malt/tart/bitterness balance, and zero puckering/astringent flavors after the finish. Lightly increasing dryness from lingering bitter/tartness. Medium carbonation and body; with a very smooth, moderately bready/grainy, and lightly sticky/acidic mouthfeel that is great. Zero warming alcohol for 6.2%. Overall this an amazing hazy sour IPA! All around incredible complexity, robustness, and balance of fruity/funky yeast, citrus/tropical hops, and moderate bready malt flavors; very smooth and easy to drink; with the mildly acidic/bitter/spicy/drying finish. Amazingly well rounded Brett complexity, balanced juicy/light dank hops, and a nice bready wheat/oat malt backbone. A highly enjoyable offering, and amazing style example. The house Brett funk reminds me a lot of Jolly Pumpkin for this batch in particular, vs others I've had.
