Biomimicry is our take on a NEIPA. Mixed fermented with Omega Yeast's 'Where Da Funk' yeast blend, and our house cultures. Double dry hopped with Belma, Chinook, Citra, and Denali for a deliciously fruity and tropical beer. We also backed down on the bitterness yet again, for a soft, smooth, and surprisingly full body. Can conditioned.

19.2 ounce can into tulip glass, canned in 8/2018. Pours very hazy medium golden yellow color with a 1-2 finger fairly dense and fluffy white head with fantastic retention, that reduces to a nice cap that lasts. Thick foamy lacing clings on the glass, with a moderate amount of streaming carbonation. Fantastic appearance. Aromas of big tart lemon, lime, tangerine, grapefruit, peach, pear, pineapple, apricot, red/green apple, passion fruit, papaya, mango, melon, berries, citrus peel/rind, peppercorn, pine, hay, straw, herbal, floral, grass, wheat, white bread dough, light leather/musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of citrus/fruity/tropical/earthy hops, fruity/funky/spicy yeast, and moderate bready malt notes; with great strength. Taste of big tart lemon, lime, tangerine, grapefruit, peach, pear, pineapple, apricot, red/green apple, passion fruit, papaya, mango, melon, berries, citrus peel/rind, peppercorn, pine, hay, straw, herbal, floral, grass, wheat, white bread dough, light leather/musty funk, and yeast earthiness. Light-moderate pine, citrus peel/rind, herbal, floral, grassy bitterness; peppery yeast spiciness; and light Brett tang/tartness on the finish. Lingering notes of tart lemon, lime, tangerine, grapefruit, peach, pear, pineapple, apricot, red/green apple, passion fruit, papaya, mango, melon, berries, citrus peel/rind, peppercorn, pine, hay, straw, herbal, floral, grass, wheat, white bread dough, light leather/musty funk, and yeast earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of citrus/fruity/tropical/earthy hops, fruity/funky/spicy yeast, and moderate bready malt flavors; with an awesome malt/bitter/spiciness balance, and no astringent hop flavors after the finish. Light-moderate increasing dryness from lingering bitterness, yeast spiciness, and carbonation. High carbonation and medium body; with a very smooth, moderately crisp, creamy/bready/grainy/sticky, and lightly resinous/rindy balanced mouthfeel that is great. Zero warming alcohol for 6%. Overall this is an awesome wild NEIPA. All around great complexity, robustness, and balance of citrus/fruity/tropical/earthy hops, fruity/funky/spicy yeast, and moderate bready malt flavors; very smooth, crisp, and easy to drink with the modestly bitter/spicy/drying finish. Nicely soft, not overly bitter. Awesome balance of juicy/dank/earthy hops and well rounded Brett complexity; nice wheat/oat/malt backbone, with minimal residual sweetness from crisp dryness. A really enjoyable offering, and spot on style example as expected. This reminds of Jolly Pumpkin funk profile a lot from the Omega yeast.
