Wild Farmhouse Ale DH w/ aged hallertau blanc. This beer is certainly for lovers of funk. Straw/hay, aged cheese, ripe tropical fruit, and fresh cut grass dominate the flavor profile.

Appearance - Pours deep golden color with a huge carbonated white head that quickly dissipates to a thin ring. No lacing.
Aroma - Big grassy funk, wet hay, white grape, green apple, light lemon.
Taste - Taste is super funky, earthy, pepper, lemon.
Feel - Medium bodied, great carbonation nice dry finish.
Overall - Really well done Saison the funk is well balanced with the lemon and mild earthiness.

Floral funk. That's the perfect way to describe this enjoyable saison. A sharp herbality pairs with hay, peppery lemon, and green apple.
The medium-light body has a fluffy froth and finishes semi-dry with a little phenolic spice coming out on the exhale.

750 ml bottle into tulip glass, 2018 vintage bottling. Pours fairly hazy deep golden amber color with a 2 finger fairly dense and fluffy white head with awesome retention, that reduces to a nice cap that lingers. Nice spotty foamy lacing clings on the glass, with a fair amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big lightly tart lemon, lime, orange, grapefruit, pineapple, passion fruit, peach, pear, apricot, melon, red/green apple, white grape/wine, citrus peel/zest, peppercorn, hay, straw, herbal, floral, grass, leather, cork, musty funk, wheat, cracker, white bread, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, citrus/tropical/earthy hops, and pale/wheat malt notes; with great strength. Taste of big lightly tart lemon, lime, orange, grapefruit, pineapple, passion fruit, peach, pear, apricot, melon, red/green apple, white grape/wine, citrus peel/zest, peppercorn, hay, straw, herbal, floral, grass, leather, cork, musty funk, wheat, cracker, white bread, and yeast earthiness. Light-moderate peppery yeast spiciness, herbal/floral/grassy bitterness; and light Brett tang/tartness on the finish. Lingering notes of lightly tart lemon, lime, orange, grapefruit, pineapple, passion fruit, peach, pear, apricot, melon, red/green apple, white grape/wine, citrus peel/zest, peppercorn, hay, straw, herbal, floral, grass, leather, cork, musty funk, wheat, cracker, white bread, and yeast earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/tropical/earthy hops, and pale/wheat malt flavors; with an awesome malt/bitter/spiciness balance, and no astringent flavors after the finish. Light-moderate increasing dryness from bitter/spiciness and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately bready/grainy/sticky, fairly crisp, and slightly acidic/tangy balanced mouthfeel that is fantastic. Minimal warming alcohol for 6.7%. Overall this is a fantastic dry hopped wild saison. All around outstanding complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/tropical/earthy hops, and pale/wheat malt flavors; very smooth and fairly crisp/refreshing to drink for the ABV, with the modestly bitter/spicy/drying finish. This definitely way more barnyard on the Brett funk than previous variations. Amazingly balanced Brett/Saison yeast complexity, Hallertau Blanc hops, and pale/wheat malts. A highly enjoyable offering, and amazing style example as expected.
