We coolshiped this beer overnight to inoculate with local microflora, and then transferred into stainless and pitched a bit of house culture to ferment. After fermentation we aged this beer in neutral charred oak barrels. We then transferred to stainless yet again to referment with concord grapes.

The beer comes in a green bottle with a caged cork. Removed the cork from the bottle and a pop emitted with a touch of mist The beer is 45 degrees and served in a tulip glass. The pour on the beer produced a two finger fizzy light tan head that dissipated quickly. The color of the beer is mahogany color with dark copper hues. The clarity of the beer is slightly opaque with yeast sinking to the bottom of the glass. The beer is quite pretty.
After I popped the cork I got grapes loads of grapes. Next, I taste, barnyard, horse blankets, malty sweetness, toasted malts, tart cherries, vinegar (in a good way), grain, and bready.
I did taste the grapes but unlike the nose it more subtle and refined in the beer. Next, I taste horse blankets, barnyard, mineral, malty sweetness, toasted malts, biscuit, tart cherries, grain, earthy, and wood.
The mouthfeel of the beer is acidic, crisp, and puckering.
The body of the beer is medium, high carbonation, and a medium finish.
Oh man, this beer is tasty. The beer has excellent harmony and balance. I was worried the strong grape aroma was going to follow through in the taste. However, the flavor of the grape was mingling happily with everyone and not being overbearing. Great beer.
