On an unseasonably warm night in January 2018, we decided to brew a spontaneously fermented beer to be cooled/inoculated in our coolship right outside our brewery. We then transferred the wort to steamed oak barrels to ferment and age. 450ish days later, and we have our first ever beer brewed with 100% wild cultures sourced from our location via the coolship, and 100% Michigan grown ingredients!

If you like traditional lambic, you are in luck. Spontaneous Generation tastes very similar to lambic, strong on overripe fruit, hay, light charred oak tannins, and a hint of vanillin. Cheers!

Foggy pale amber with a persistent, fuzzy off-white head.

The nose is like blackberry gin while the palate has lemon pepper and light white oak via a crisp, tingly body that's nicely refreshing and lightly nutty, finishing semi-wet.

A- A clear golden straw with a small white head.

S- Sour, lemons, apples, oak, very nice barnyard funk.

T- Sour, apples, lemon, oak, barnyard funk.

M- Smooth, light body, crisp.

O- Very sour for the style, but still great, very easy to drink.

L - minimal bubbly head atop a translucent yellow body.

S - funk, grape, citrus, lime, hay.

T - michigan horse blanket. Tart apple and lime. Quite acidic and sour. No bitterness. Low sweetness. No booziness.

F - light body with high carb.

O - just awesome.

750 ml bottle into tulip glass, 2019 vintage. Coolshipped on 1/22/2018. Pours slightly hazy pale golden straw color with a 1-2 finger dense and creamy white head with great retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big sour/tart/tangy lemon, lime, orange, grapefruit, peach, pear, apricot, mango, melon, red/green apple, white grape/wine, hay, straw, grass, peppercorn, leather, cork, wet wood, musty/lacto/barnyard funk, wheat, cracker, and white bread; with lighter notes of white wine vinegar, oaken vanilla, oak char, and yeast/oak earthiness. Incredible aromas with fantastic complexity and balanced of fruity/funky/acidic/spicy yeast, oak barrels, and moderate pale/wheat malt notes; with big strength. Taste of big sour/tart/tangy lemon, lime, orange, grapefruit, peach, pear, apricot, mango, melon, red/green apple, white grape/wine, hay, straw, grass, peppercorn, leather, cork, wet wood, musty/lacto/barnyard funk, wheat, cracker, and white bread; with lighter notes of white wine vinegar, oaken vanilla, oak char, and yeast/oak earthiness. Light-moderate lactic tartness, wine tang, and yeast/oak tannin spiciness on the finish. Lingering notes of sour/tart/tangy lemon, lime, orange, grapefruit, peach, pear, apricot, mango, melon, red/green apple, white grape/wine, hay, straw, grass, peppercorn, leather, cork, wet wood, musty/lacto/barnyard funk, wheat, cracker, white bread, vinegar, and yeast/oak earthiness on the finish for a good bit. Incredible complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, oak barrels, and moderate pale/wheat malt flavors; with an awesome malt/tart/sourness and barrel/wine tan balance; with no puckering/astringent flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering tart/sourness and wine tang/tannins. Medium-plus carbonation and light-medium body; with a very smooth and moderately creamy/grainy/acidic/tangy/tannic balanced mouthfeel that is great. Zero warming alcohol as expected of 5.4%. Overall this is an amazing American made Lambic style! All around incredible complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, oak barrels, and moderate pale/wheat malt flavors; very smooth, easy and fairly crisp to drink with the modestly acidic/tangy/tannic/drying finish; not overly lactic. Amazingly well rounded Barnyard Brett/Bacteria complexity; with great oak presence, and pale/wheat malts against acidity. Minimal residual sweetness with crisp drying. A highly enjoyable offering, and amazing spot on style example. They nailed this one for sure. Tastes just like a true lambic from Belgium.

A - Pours a clear gold with a one finger fizzy white head. The head falls quickly leaving some very light lacing.

S - Aroma is lemon, white vinegar and leather.

T - The taste is lemon, green apple, peach skins, white wine, oak and nice kick of lacto funk.

M - Medium body with medium/low carbonation. Soft mouthfeel with a nice dry finish.

O - Pretty solid traditional style Lambic. The flavors are on point with each drink leaving you wanting more. Very nicely done.
