Sour IPA Dry Hopped w/ Denali, Nelson & Azacca - Our first sour IPA went over so well that we decided to make more of them! We learned a few tricks since the first batch, so this time around we decided to blend the IPA & sour at a 50/50 ratio, making it slightly more sour. Then we liberally dry hopped with hops from all around the world.

Poured into a tulip. A very hazy golden color with a thick white head. Decent foam retention. Phenolic Brett aroma along with citrus and tropical notes. Taste followed. An interesting blend of fruity flavor with phenolic and slightly tart lemony notes. Relatively dry on the finish with white grape and tangerine. It works quite well and is highly recommended for those who dig the funk.

16 ounce can into tulip glass, canned in 7/2019. Pours very hazy deep golden/orange/amber color with a 1-2 finger fairly dense and rocky off white head with fantastic retention, that reduces to a nice cap that lingers. Nice dense foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big tart/sour lemon, lime, mandarin orange juice, red grapefruit, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, guava, blueberry, gooseberry, red/green apple, white grape/wine, peppercorn, pine, hay, straw, herbal, floral, grass, wheat, cracker, white bread dough, light musty/lacto funk, and yeast earthiness. Damn nice aromas with great balance and complexity of citrus/fruity/tropical/earthy hops, fruity/funky/acidic/spicy yeast, and bready malt notes; with big strength. Taste of big tart/sour lemon, lime, mandarin orange juice, red grapefruit, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, guava, blueberry, gooseberry, red/green apple, white grape/wine, peppercorn, pine, hay, straw, herbal, floral, grass, wheat, cracker, white bread dough, light musty/lacto funk, and yeast earthiness. Light-moderate lactic tartness, Brett Tang; and pine, citrus peel/rind, herbal, floral, grassy, peppery bitterness on the finish. Lingering notes of tart/tangy lemon, lime, mandarin orange juice, red grapefruit, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, guava, blueberry, gooseberry, red/green apple, white grape/wine, peppercorn, pine, hay, straw, herbal, floral, grass, wheat, cracker, white bread dough, light musty/lacto funk, and yeast earthiness on the finish for a good bit. Incredible complexity, robustness, and balance of citrus/fruity/tropical/earthy hops, fruity/funky/acidic/spicy yeast, and bready malt flavors; with a fantastic malt, bitter, tart, tangy balance; with no puckering/astringent flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering bitter/tart/tangy. Medium carbonation and medium-plus body; with a very smooth, creamy/bready/grainy, fairly sticky/acidic/tangy, and lightly resinous/rindy mouthfeel that is fantastic. Zero warming alcohol for 6%. Overall this is an incredible sour IPA. All around fantastic complexity, robustness, and balance of citrus/fruity/tropical/earthy hops, fruity/funky/acidic/spicy yeast, and bready malt flavors; very smooth and fairly crisp/refreshing to drink with the mellowly bitter/acidic/tangy/drying finish. Fantastic soft feel, not overly bitter/lactic. Amazing Denali, Nelson & Azacca profile. Very juicy and fairly dank/earthy hops; balanced Brett/Bacteria complexity; with a great wheat/oat/malt backbone against acidity. Light residual sweetness with crisp dryness. A highly enjoyable offering, and amazing style example as expected.
