Once again we've teamed up with our good friends at Cultivate in Ypsi to craft an insanely creative beer. First we started with second use whiskey and tequila barrels, and then filled them with cark sour. 375 ml bottle into tulip glass, released in 12/2019. Pours opaque black with brown edges and a 1 finger fairly dense and fluffy khaki head with great retention, that reduces to a nice cap that lingers. Nice spotty soapy lacing and clinging bubbles on the glass. Aromas and flavors of big nutty coffee, cascara, raisin, fig, date, lemon, green apple, red wine, whiskey, tequila, toasted oak, vanilla, musty/lacto funk, hay, straw, grass, peppercorn, leather, agave, wheat, toasted bread, and light cocoa. Moderate lactic tart/sourness, and light spiciness on the finish. Medium-high carbonation, light-medium body, and fairly crisp finishing. Moderate lactic acid, some grainy malt, and tannins in the mouthfeel. Lingering lactic acid finish, with minimal pucker. Minimal warming 7%. Perfectly balanced between the dark sour, barrel, and coffee character. Great brett and lacto development after 2+ years. One of their best sours yet.
