Foeder Aged Spontaneous Ale with Orange Zest, Cocoa Nibs, Fenugreek, & Tamarind
This beer has taken quite the journey to get here! Over two years ago we decided that we wanted to add variety to our spontaneous lineup, so we brewed an amber base, cooled it overnight in the coolship, and threw it down into our 30bbl oak foeder. After two years of aging and mellowing out, we decided on some light additions of spices and tangy tamarind to up the complexity even more, while still allowing the old world sour base shine through. “You taste something new every sip!” - Sweet Lu. 1512 bottles produced.

Ruby brown body, tan pinky finger of foam. Oak and orange with hints of maple and vanillins aromas, doesn't come together super well but works. Orange, oak, and tamarind is really nice up front in the taste, the fenugreek is half lost by only showing tones of maple here and there, cocoa is completely confused in how out of place it is but doesn't really detract, just not needed. Feel is medium bodied, decently carbonated, sour and bright with constant oak.

A: The beer is brownish red when viewed from afar; when held up to a bright light it is relatively clear reddish amber in color and has a light to moderate amount of carbonation.
S: Moderate aromas of oaky vanilla and cherries are present in the nose along with hints of vinegar.
T: The taste is a bit sour and has flavors that follow the smell with additional notes of cocoa nibs and orange citrus with hints of spices.
M: It feels light- to medium-bodied and slightly tart on the palate with a moderate amount of carbonation.
O: This beer smell and tastes like a traditional feeder-aged ale and you only really get subtle notes/hints of the additional ingredients in the taste.
