Mezcal Barrel Aged Sour Ale - This is about as straightforward as we get at Speciation - We filled a single 2nd use Mezcal barrel with golden sour about 18 months ago, and bottled the whole thing up. 492 bottles produced.

Murky golden body with a white ring. Big mezcal barrel in smell, taste and feel, but the oak is soured and the agave booze made complementary, fascinating. Nose has lemon, lime, and ginger. Taste adds to that hibiscus, very lighthearted funk and a hint of peach. A very interesting take on the wild ale

My first Speciation wild ale I think. I’ve been meaning to try them for awhile and the mezcal barrel aging in this one caught my eye. I love mezcal on its own and haven’t seen it used yet (that I can remember) so I had to try this. The smell is amazing to me. There’s not a lot of smoke from the mezcal that I’d think, but you know there’s something more than a regular wild ale here. On the pallet the tartness comes through first and foremost but then things settle down and you get the complexity of the barrel aging with a hint of smokiness. I wish it were a bit more carbonated. It’s not low, but I like it a tad more. The taste lingers in the mouth. What a great beer! I’ll be buying more from them and recommend this one to anyone if you see it.
