Collaboration with Industrial Arts Brewing and Thin Man Brewery

The first in our collaboration beers with Thin Man Brewery & Industrial Arts Brewery, we took the Gose style and gave it an Irish twist. We went to the hunt to find some indigenous ingredients we could use. We sourced oysters from The Wild Atlantic Oyster Company, sea salt from Achill Island Sea Salt Company and handpicked seaweed from our friends at Viva Seaweed baths. We hope you enjoy our unique take on a 16th century style beer. Craft brewed in our independent brewery in Silgo.

better than its ratings, a cool collaboration, and a neat beer to put oysters in, although i really wanted this to be weirder. at the same time that i respect it for being subtle in the right ways, i also sort of need more from it, i want to taste salt and seaweed and oysters as odd beer ingredients in this well made base gose, but i hardly do, mostly in the finish for all of it, and it just ends up tasting like a slightly better gose than everyone else is doing, but not nearly as interesting as it should given the recipe. still light to drink, not much malt flavor here, lots of bubbles too, and an assertive, even gripping dryness, all of which i like. the salt is there, but it doesnt taste special to me, and the oysters add some obvious protein to the body and perhaps a bit of added salinity, but not the fishy funk i wanted here. seaweed is minimal too, but none of this negative talk has anything to do with how well i liked the beer overall, which was a whole lot. tart and clean and crisp and with a little of the oyster fresh cold water oceanic vibe later on, i want more of all the ingredients, but this is a great gose, no debate. smart use of some curious adds, be bolder next time! drinkable by the barrel full, we all thought this was delicious on a hot summer boat day!

A: The beer is clear yellow in color and has a moderate amount of visible carbonation. It poured with a half finger high white head that died down, leaving a few small patches of bubbles on the surface and a collar around the edge of the glass.
S: Moderate aromas of seaweed are present in the nose—these seem to resemble orange peel.
T: The taste follows the smell and is somewhat orangey with some salty hints of brine towards the finish.
M: It feels light- to medium-bodied on the palate and has a moderate amount of carbonation.
O: I would never have guessed that a seaweed and oyster gose would be this pleasant tasting.
