Poured into a Fremont small snifter. Pours a very dark mahogany brown, appearing opaque in the glass with a quarter finger, dark khaki head that slowly dissipates to patches with light lacing. Aroma of dark toasted malt, cocoa, bourbon, dried plums and light molasses. Flavor is dark toasted malt with light char, bourbon, dried plums, bakers chocolate, woody oak and licorice developing into the finish. Medium bodied with light to moderate creaminess. A solid barreled stout with good woody barrel and bourbon character, nice chocolate and licorice. Like the Life I had a few weeks ago, the mouthfeel is a little thin for this size of a stout, especially an oatmeal stout, but the malt depth and flavor complexity is very nice. Overall a fine job barreling a flavorful stout.

One and a half inches of tight khaki head holds for several minutes, then falls to a thick ring and blanket. Trinity is jet black and shiny until put to bright light, where it reveals a muddy, milk chocolate consistency with dark chestnut sediment in suspension. A dense coating of fine lace covers the Swiftwater snifter and washes away as a thick, syrupy film rides the wall of the glass.

The aroma is a spectacular combination of sweet Bourbon and rich roasted malt, followed by oak and dark chocolate. The Bourbon and malt are show stoppers and allow old leather as it warms.

The dark roasted malt is a primary flavor with mild bitterness. Bourbon follows quickly and remains solidly secondary. Oak holds the background while anise and chocolate add ornamentation. Black licorice holds on long into a mildly sweet finish.

The body is full to dense with a syrupy texture. The alcohol adds a pleasant heat, similar to hot peppers. Carbonation is light at best.

This is a great sipping beer that brings thoughts of heavy old leather furniture and books, as well as my grandfather.
