Pinta Colada is a stout of the lighter variety, the darkest brown bordering black. The chestnut brown highlights show brightly when backlit. A creamy mocha head rises to a finger in height on a rather aggressive pour. and though it falls to a cap it leaves impressive, thin, sticky, sheet lacing down the glass. Purty.
A bold roast hits the nose right off the bat and is met by sweet, refined roasted coconut to balance it out. The barley roast is reminiscent of black coffee, and high cocoa content chocolate, while lactose adds a coffee and cream component. Coconut is rich yet smooth but the roasted grain is what rules the nose. This description sounds dessert like but the roast is enough that it keeps the nose from being sweet. It's more along the lines of a morning drink.
The roasted coconut flakes come through more in the flavor while the roasted grain lays a base that runs throughout. The roast, in this case, brings a touch of black coffee but it leans more toward the darkest of chocolates. Add in a hint of sweetness from the lactose and you have yourself a dark chocolate Mounds bar without the big sweetness. As a matter of fact the roasted grain leaves behind a softly bitter cocoa-like sweetness that I thoroughly enjoy.
The body is on the light side of medium and it works well. I have a feeling a plush body would work equally as well but that doesn't matter right now. It's wet and fairly quick moving with an active, yet soft, carbonation. The easy roast bitterness hits the sides of the tongue. This beer can be drank in mass quantities.
Pinta Colada is not only a very good beer but it's fun too, and isn't that what drinking is all about? It's a roasty stout with enough of a dark chocolate/cocoa character that when the coconut flakes and lactose are added it makes for a delicious drinker. I was worried about the potential for overly sweet when at the brewpub but after the first couple drinks put in an order for a growler, the roast cuts any overly sweet notes. Thirsty Pagan brews some good, interesting, and fun beer. It's an underrated joint.

I was excited about this one, but it was a little bit of a letdown. The coconut was there but the base beer was too roast and burnt. So much coconut in the finish. Liquid mounds bar.
