It’s not too bad. Fairly non-descript but smooth slight toffee and malt sweetness.

I feel bad dinging this just because still beers aren't my thing but I think I would have absolutely loved it with carbonation. It's the first still I've had, so take this with a grain of salt. The bourbon flavor kicks in towards the end with serious strength - initial taste is very thin and lacking in my opinion because of the lack of bubbles.
