A rustic Farmhouse inspired mixed fermentation with Italian plum. Lightly toasted malt character, very dry, light tart cherry acidity and dark stone fruit character. Uses House Belgian yeast, Brett Lambicus, Lactobacillus Helveticu. Lagered 3 months on Cabernet Soaked American Oak.

An amber beer with ruddy orange highlights and slight murkiness (SRM 7-9). A two-inch, almond mousse lasts several minutes and falls to a thin blanket, leaving no lace on a Pretentious Beer Glass Company Crispy Boi tulip glass.
The aroma is distinctly, yet modestly, funky with light fruitiness. Orange, lemon, and plum are all noticeable. Spicy sourness is similar to mild apple vinegar. A light soapiness detracts.
The flavor opens with sharp, yet mild, acidity, and mild sourness. Surprisingly, the flavors are fairly bland, with faint plum and possibly strawberry. The finish is brief and faint.
A light body with the texure of stiff tuille. Highly effervescent, with alcohol as expected. This beer is fairly dry.
Easy drinking and far more mild than expected. One would likely enjoy this beer with scallops in butter sauce.
