a rad little beer here from an operation i had never heard of before my brother so generously shared this bottle with me. apparently they use some different wild yeasts in each batch or something, and this one is batch 4, a very familiar brett complexion, very flavorful and rustic farmhouse type beer here, really pretty well done. its clearish for the first part of the bottle, a lot more hazy in the second half, and with a super active carbonation that yields several inches of airy white head with great retention. some neat vinous funkiness to this, light oak and white pepper and green pear, white wine to me, subtle lime and orange zest, very fresh. not overly mature on the brett though, a little cheesy and raw still, but perhaps just a little cleaner in the flavor. plenty of funk though, which is awesome on such a light grain base, pils type malt is dry and crackery, and likely some wheat, but its minimal overall. the hops are awesome in the flavor, not sure i have heard of ultra hops before, but they have a sort of noble complexion with the other ones happening in here, dry hoppy, grassy, even a little cascade sort of spiciness, but appropriately restrained. tons of wild weirdness at the end, cherry juice tang and earthy hops, maybe a little bit messy in terms of refinement, but the flavor is awesome and this seems built to cellar really well. already dry and layered and interesting though. fun and flavorful beer, awesome texture, and a treat to get to share with my brother! i will need to track down more beers from these guys when i am back in the state next month...
