The first of our "Landscape" series. A blend of 3 oak barrels between 12 and 35 months. This spontaneously fermented farmhouse ale was made of locally sourced ingredients, conditioned with local wildflower honey and made with our own aged hops.

500mL bottle, no date or vintage that I can see, poured into a chalice. Hazy pale orangeish-golden color with a fizzy white head that quickly vanished. Oak, honey, lemon, pineapple, sour funk on the nose. Puckering sourness smashes your palate then gives way to oak tannins, tart fruitiness, honey that improves as it warms just a bit. Acidic with very minimal carbonation. Hope to see this and more from this brewery again.

“Local farmhouse ale" on the label, man was I surprised after the first sip.
Tastes like an ultra-sour unblended AmLam, no carb and very acidic. Lots of oak, lemon, grapefruit, lychee, sour smarties. It had the acetic sting of “Gout Americain” but finishes very dry with a little aftertaste of honey minus any sweetness. Medium bodied, oak forward, mouthwatering sour fruits. Reminiscent of a natural wine with a ton of acidity and oak. Overall it was enjoyable but not getting "farmhouse ale" vibes in any way.

Have been missing my access to white rooster, another winner in my book. Golden pour with a thin white ring. Smell features vibrant oak, honey, wildflowers, playful funk, pineapple, apricot, and lemon. Taste is oak forward, with all of the flavors from the nose with additional nectarine, hay, and grass. Feels bright, slightly sweet with the kiss of tartness, and very oak laiden. Criminally underrated brewery, please send more up to chicagoland!
