Small in batch size but big on flavor, the artisans at Theoretic Ales take a lambic-like funk and fauna and applying it to a flanders style of base taste. Extended aging in red wine barrels ensures that the lines between vine and grain is surely blurred.
A Moment In Time, Volume Two pours with a nearly still, rusty red hue. A dainty swirl of creme teases the nose with dark, pitted fruit, a strong twinge of sourness and a must drift of earthen perfume. Spicy, woodsy and toasty, the scent precedes a candied, fruit sweetness with a juicy, toasty maltiness.
Fruits and spice follow a fledgling malty sweet middle palate. On a winey and fruit filled track, the robust taste of red wine is trailed by blackberry, black cherry, date and light prune. All have a spicy, tart and savory oak complexity that brings a depth of sherry wine and peppercorn to the finish. Sharply sour, a rounded taste of balsamic, almond and red wine tannins dive into a subtly bitter finish.
Medium bodied and quite robust for sour ale, the beer's funk and fauna returns in aftertaste with hints of leather and farm. Its spicy, sour and toasted finish leaves a light candy and cola texture on the tongue. Its a truly unique beer that uses pieces and parts of brewing history and rusticity, and then applying an innovative American twist.
