Sorachi Brut is a single barrel bottling of fine strong beer.
A simple grist of pilsner and wheat malt, plus large quantities of Columbus and Sorachi Ace hops made a bitter and highly aromatic wort. For the uninitiated, Sorachi Ace is among the most distinct hops. Bred in Japan, and now grown in the US, it gives flavours of coconut and lemon, as well as savoury dill and butter. It works well as both a boil-hop or in the dry-hop, but we feel that this boil addition has allowed the best expression of its unique qualities.
The wort underwent spontaneous fermentation in several white Burgundy barrels, chosen to suit the aromatics of the hop. Just one year later, a single barrel was deemed excellent and too good to use in a blend. It is presented here as a single barrel bottling. It manages to be both delicate and powerful and signs off with a long oily finish, lifted by prickly carbonation.
