Table-strength saison brewed with Midwestern ingredients, fermented with our house culture, aged in a wine barrel, and re-fermented with a light dose of Illinois-grown watermelon from Nichols Farm.

Clear bubbly golden body with a finger of white foam. Nose has general oak sour notes, with muddled grape and watermelon, flowers, lemon, and very delicate funk finish. Taste is a revelation sbout how the watermelon so smoothly integrates about a third of the way into the sip. Set up by oak and vinous notes, The watermelon attracts lemon, lighthearted bratty funk, and the delicate wild yeast. Feel is light, delicate, oaky, and smooth. Feels like the watermelon smoothed over the funk a little bit compared to the normal, nice variant
