For this beer we used the base grain bill and fermentation profile for Afterthought Ale alongside Chinook and Simcoe on the hot side, but then aged it in Barrel #35 after the initial "Barrel #35" came out of its namesake barrel. Following its time in oak, we dry-hopped it with a decent dose of Cashmere and Riwaka.

Served from the bottle in a Lagunitas mason jar.
Pours a hazy pale limoncello with a minor spritz of off-white foam on top. The nose comprises grapefruit zest, tangelo, funky wheat, and hay. The taste holds notes of cara cara, soursop, dry mushroom, wild onion, tart white wine, and wet grass. The body is a light-leaning medium, with a light moderate carbonation and a slick-ish feel. A decidedly pleasant and complex bit of barrel-aged saison.

I love afterthought, but this one missed the mark for me. Cloudy bright yellow body and full white head is a great appearance. Nose is so hoppy, with sour citrus and melon, hops ruin this nuance though with harsh bitterness. Taste has the hops take on a soapy complexion, sour oak, fruits and flowers all are consumed by it. Feel is bitter but not in an artful way, thin, dry and lightly sour. Not for me, drain pour
