500ml bottle. Label includes the information of 'Bottled: August 24, 2022'.
Pale gold colored body, with a bit of apple juice. Translucent in look. Very foamy after releasing the cap, but not overflowing. One finger white head, which forms a thin cap and bubbly ring. Exquisite rising bubble show. Leaves behind a few short strings and spots of lacing.
Aroma is multi-faceted - lemon, white wine, earthy funk, oak, peach, pear, and berry.
Taste is expressive and deep. The lemon tartness works well with the earthy funk. The fruit flavors of green apple, peach, and berry rise later. Honey sweetness hovers. Very mellow lower tone aftertaste.
Medium mouth feel, with a drying tightness. Excellent carbonation.
A Saison with honey, as a addition, for more complexity and depth.

Murky golden body with two fingers of white foam and thick sheets of lacing. Getting honey wrapped yuzu, lemon, gin, bright oak, flowers, and faint berries. Taste is must the same but add a layer of musty funk within the gin and the house culture to the finish, but everything is more dull in comparison to more vibrant nose. Feel is well balanced by allowing the honey character to shine in the middle while never losing the light sourness, mild funk and barrel in a light and bright body. Best HE yet!
