This is a version of the base for Saison Meer but brewed with a large dose of Wind Malt from Sugar Creek Malt. Wind Malt is lighter and fruitier than traditional pilsner malt and is created by following a slower, lower temperature process for drying the malt with the aid of the sun and wind. We always get a subtle blueberry aroma from the malt when mashing with it. Following its initial fermentation, the resulting beer then rested briefly in a gin barrel.

Cloudy yellow body, finger of white foam, mild lacing. Big bretty funk marries bright, oak, and gin, in a musky way before grapefruit zest and flowers enter in the nose. Taste is not so elegant, tasting like a diaper met gin in a flower field, before moldy grapefruit and sawdust emerge. Feel is somehow very acidic, despite large funkiness, wet too, and as it warms, oaky
