Employing processes and ingredients that we’ve not used before with the aim of expanding our range of dark beers for the colder months, Dream #5 is our first Baltic Porter.

Pours a pitch-black coloration with a large, creamy, mocha-colored, lasting head. Smells of roasted, caramel malt, chocolate and coffee, with hints of floral, herbal hops as well. Taste is a great balance of roasted, caramel malt, some chocolate and coffee, lighter dark/red fruit, with accents of fig and cranberry, as well as hints of brown sugar, licorice and floral, herbal hops. Finishes bittersweet, with a light bitterness and some chocolate, coffee and floral hops lingering in the aftertaste. Full mouthfeel with a rich body and light/medium carbonation.
This makes for a pretty nice Imperial Baltic Porter with a good balance of sweet and roasted, bitter notes, with some rich chocolate and coffee as well as accents of floral, herbal and bitter hops. Although the ABV is noticeable here, it's really not too bad, while there's a nice body and mouthfeel to this as well. I still think it could be better balanced being a bit too sweet and floral for my personal taste, but overall this makes for a pretty enjoyable, rich and full example of the style.
