Experimentation and innovation are at the heart of our Dream series. Whether it’s comparing small variances in recipes, flirting with unfamiliar styles or trialling new ingredients, our goal is to keep learning, develop fresh techniques and hone our processes. All this in the hope of brewing your dream beer!
With Dream #6 and Dream #7 we’re examining the effect of speciality malts on a big Imperial Stout. Dream #6 takes the approach of less is more. While Dream #7 doubles down on even more crystal and chocolate malts.

Copenhagen 1/6 2023. 44 cl can from DrikBeer web-shop. The usual naivist design of Fuerst Wiacek's Dream series which looks like some kind of weird auditorium.
Pours opaque dark brown with a small beige head. Settles as thin patch of foam struggling to cover the surface of the beer. Clinging to the sides of the glass. Moderate lacing.
Aroma is fairly intense with a dark, sweet and earthy odor mingling with dark fruit. Toffee, chocolate and brown sugar. Leather and humid soil. Vanilla and bit of licorice.
Light carbonation. Thick, oily, soft, creamy, viscous, almost flat texture.
Flavor is intense with a strong sweetness followed by a moderately strong bitterness. Aftertaste is sweet and lingers for a while. Finish is semi-dry.
Not necessarily innovative. But a sweet and earthy Powerhouse.

Pours a pitch-black coloration with a large, frothy, mocha-colored, lasting head. Smells of roasted, caramel malt with notes of coffee and chocolate, as well as just a hint of earthy hops. Taste is a great balance of roasted, caramel malt, coffee, milk chocolate and hints of red berries, brown sugar, licorice and earthy, herbal hops. Finishes bittersweet, with a light bitterness and some coffee, chocolate and licorice lingering in the aftertaste. Full mouthfeel with a medium/rich body and light/medium carbonation.
Just like Dream #4, this came as a really positive surprise to me, but even more so. I really think that this makes for a quite rich and well-balanced Imperial Stout with a great, full mouthfeel. While it may be just a tad too sweet for my personal taste, with that brown sugar note being a little much, the roasted malts and bitter, earthy hops balance this out nicely enough, while those coffee and milk chocolte notes really do stand out here. Defintely one of the best stouts I've had from those German breweries otherwise specializing in NEIPAs, once again establishing Fuerst Wiacek as one of the better modern breweries that Germany has to offer.
