Hop Harvest is an exploration of the results of our first hop selection. In September 2021 we went to Washington and Oregon to pick the fields of hops we will brew with in 2022.
Our Mosaic IPA was brewed with hops hand selected from Yakima Chief Hops. We picked this field from Coleman Agriculture in Oregon for its intensely sweet, berry, dank and citrus aromatics.
We’re excited to see how the aromas we released rubbing the hops during selection translate to flavours in the finished beer.

Pours a hazy, bright orange coloration with a medium, fluffy head. Smells of light biscuity malt and citrus/berry hops, with notes of orange and blueberry. Taste is an excellent balance of light biscuity malt and fruity, juicy, slightly dank hops, with citrus, berry and lighter tropical notes of orange, blueberry, gooseberry and papaya, as well as just a hint of grassy weed. Finishes with a very light bitterness and some orange and berries lingering in the aftertaste. Soft mouthfeel with a medium body and carbonation.
I always love drinking a single-hop IPA and Mosaic is especially interesting because there's such a huge array of flavor to the variety that you never know what you are going to get. In this case, the berry notes, which you don't always get, stand out particularly, with a very distinct orange note and much lighter tropical accents as well. It's a little too sweet for my taste, lacking a distinct bitterness, but makes up for that with some citrus zest. Overall, this makes for quite an interesting an enjoyable NEIPA with strong citrus and berry notes.
