An extremely dry, almost champagne like IPA hopped with Amarillo and Hallertau Blanc. Adding the enzyme glucoamylase to the fermenter results in a beer with zero residual sugar and a lingering dryness. Aroma of gooseberry, white grapes, and orange zest. Highly aromatic and with prickly carbonation.

A: Pours a clear medium golden yellow in color with moderate amounts of fine active visible carbonation rising from the bottom of the glass and moderate amounts of medium yellow + amber colored highlights. The beer has a half finger tall sudsy foamy bright white head that reduces to a large patch of slightly mottled very thin film covering the entire surface of the beer and a thin ring at the edges of the glass. Light amounts of lacing are observed.
S: Moderate aromas of light fruit (white grape) and lemon grass with slightly stronger than moderate aromas wheat + pale malts and just shy of moderate aromas of champagne yeast. Hints of citrus/orange zest and gooseberry hops.
T: Upfront there are moderate flavors of wheat + pale malts with minimal amounts of sweetness, That is followed by moderate flavors of champagne yeast, light fruit (white grape), and lemon grass. Very light flavors of citrus/orange zest and gooseberry hops which impart a light amount of bitterness which fades away fairly quickly leaving an extremely dry finish.
M: Light to medium bodied with moderate amounts of carbonation. Slightly heavier than moderate amounts of dryness in the finish.
O: Easy to drink and enjoyable with well hidden alcohol and an extremely dry finish.

A: The beer is crystal clear yellow in color and has a light amount of visible carbonation. It poured with a short white head that rapidly dissipated, leaving only a minuscule ring of white bubbles around the edge of the glass.

T: The taste follows the smell, having flavors of lemongrass with notes of white grapes and just a faint amount of bitterness.
M: It feels medium-bodied and bone dry on the palate with a moderate amount of carbonation.
O: I liked the unique aromas and flavors of lemongrass and grapes in this beer but overall I felt that its very dry mouthfeel was its most defining quality.
